With iOS 15 and iPad OS 15, the process has been greatly simplified.

How to back up your data and then reset your iPhone / iPad to factory default
Open the "Settings" app on your iPhone and go to "General". Scroll down and select "Transfer or reset iPhone".
If you're planning to buy a new iPhone, Apple suggests backing up all your iPhone data to iCloud, even if you're not paying for iCloud Storage.
This data will be stored for a week and will be deleted from your iCloud account after restoration.
To take advantage of this option, select Get Started in the Prepare a New iPhone section.
To completely erase the data on your iPhone, select "Erase all content and settings".
This will bring up a new page with an overview of everything that will be removed from your device.
This is the first time I've seen Apple ID, Find My, Apple Wallet, etc. in this list. Tap the "Continue" button.
Enter and confirm your iPhone passcode. If your iCloud backup isn't complete, you'll be given the option to continue this process once the backup is complete.
We recommend that you finish this backup and take a local backup on your iPhone or iPad. If you want to skip the backup process, tap "Skip backup".
Then enter your Apple ID password to log out of your device and disable "Find My" and "Activation Lock".
After entering the password, tap the "Power Off" button, then tap the "Erase iPhone" button.
The iPhone / iPad will now begin the factory reset process, and after a few minutes the device will return to the "Hello" screen.
Now you don't have to worry about sharing your personal information with strangers, so you can buy and sell your iPhone / iPad freely.
